Abstract

BSE, acylamide, rotten meat, obesity: nutrition has become a permanent social problem in Germany. A change in eating habits seems to be urgently needed. Shaping this change is a challenge for politics, companies and society. For the necessary change of paradigms, we must ask how we want to eat and not how individuals should eat. Consumer needs and scope for action must be taken into account as well as the appropriate handling of natural resources and promoting a healthy diet –now and in the future. This book is based on the findings of the research project “changing eating habits”. It sets out the need to act for sustainable eating habits, dispels widespread myths and demonstrates possible options for changing eating habits.
